85% muscat, 15% clairette. from a biodynamic producer, this is like a more sophisticated asti: the must is cooled at 3% abv and then fermentation continues in the bottle, lying on its lees for at least four months before the wine is filtered under pressure from one bottle to another. the result is a very easy, engaging wine that’s fruity, fresh, grapey, floral, and tropical, with a sweet, light palate. alcohol is just 8%. irresisible.
