this bottle the elegance extra brut mv is from a multi year blend of 2011 to 2016 with the majority coming from the 2015 and 2016 harvests. the cuvee is made up of 80% pinot noir and 20% chardonnay. after five years of ageing on its lees, the elegance was disgorged, topped up from magnums of older champagne and finished with a dosage of 4.5 grams per liter. the nose of the elegance shows its warm southern location with an aroma set of yeast, marzipan, golden apple, stone fruits, and a light oxidized spice note. the palate is present with yeast, stone fruits, apples, marzipan, and a just there clay minerality. try this with soy-basted pork chops. d&m tasting notes
